Charbroiled chicken bruschetta

A quick, easy, and inexpensive way to enhance your own bruschetta recipe, or why not try ours.

Ingredients (per serving)

  • 4 plum tomatos (medium)
  • 3 garlic cloves (finely chopped)
  • 3 large basil leafs (finely chopped)
  • 1.5 tbsp olive oil
  • 1 Tamsco’s Charbroiled Chicken Breast
  • 1 chiabatta bread
  • 2 tbsp butter
  • pinch parsley, pepper & parmesan cheese as desired


Bruschetta Mix: Chop tomatos and place in a small bowl. Add 2 cloves of chopped garlic and chopped basil. Pour olive oil into the bowl and mix gently through tomatos, garlic, and basil and set aside.

Garlic Bread: Add remaining chopped garlic to butter and melt. Cut chiabatta bread in half then cut in half again from corner to corner so you have 4 triangular pieces. Brush on garlic butter and toast.

Charbroiled Chicken Breast: Heat one of Tamsco’s chicken breasts on grill until warm throughout. Cut chicken length ways on a 45-degree angle into 4 strips.

Presentation: Place garlic bread on a dinner plate in a star pattern, then place the cut chicken strips length ways on bread, (1 strip per slice of bread). Spread out Bruschetta mix over the bread and chicken, sprinkle with parsley and add pepper and parmesan cheese as desired and serve. Charbroiled Chicken Bruschetta is also a great side dish.
